Milton’s Story
When I was 23 years old I took a trip to Mexico City and I fell in love with the taco culture.
One of the favorite things to have was the Al Pastor tacos, I probably ate Al Pastor tacos for breakfast, lunch & dinner every day I was there in Mexico City. The energy and the thrill of eating these flavorful tacos & more was mind blowing to me.
I grew up in El Salvador but as a teen I moved to the USA. In the US I have met lot of Mexican people and was drawn to the culture & of course the food! I’m now married to a beautiful Mexican woman and love to serve the food that I was always meant to serve.
Fast Forward a few years, and now I’m a little bit older now 😅 Due to logistics and sanitation codes, it’s more difficult to replicate some of the things found in Mexico City. However, I’ve done my best to re-create these flavors that are so mouth watering!

About Our Flavors
Our adobos are made using Guajillo, Pasilla, Ancho & Moritas peppers.
Our chicken is marinated in a Guajillo adobo with toasted spices and vinager the same way the great folk of Mexico City marinate the Al pastor trompo. Since I couldn’t use fresh pineapple to complete the Al pastor style we made a marinade with pineapple juice and spices to better complement the flavor of our chicken.
We love pork in our family so we wanted to pay tribute so we made our Cochinita pibil ( pulled Pork) to represent the Yucatán. We made our own picked red onions to complement the cochinita.
We use three Kinds of peppers for our steak adobo starting with Guajillo, Ancho & Morita to better enhance the flavor of our Carne Azada. We also make a great barbacoa with toasted spices and a little bit of New Mexico Green Chile’s toasted spices and of course bay leaves. Our seared shrimp is made with a very special house sauce made with Guajillo & moritas
